A broccoli crown is an edible flower head that sprouts from the stalk with cut-off or shortened stems. The flower head is dark green with a lighter shade of green stem. A crown of broccoli is the head of the broccoli with the stalk cut to less than one inch in length. The flavor of the broccoli crown is earthy with just a hint of bitterness at the end. Broccoli is usually steamed, sautéed, or roasted. Broccoli crown is available year-round.

Storage
The broccoli crown should be stored at 32ºF (0ºC) with a relative humidity of ninety-eight to a hundred percent with mist.
Package ice is required if you cannot maintain the recommended temperature or relative humidity.
The typical shelf life is two to three weeks. Coldwater can revive a slightly wilted broccoli crown. Long-term storage leads to discoloration, buds falling off, and softening.
Broccoli crown is highly sensitive to ethylene, a naturally occurring gas that regulates ripening, with a common symptom of florets yellowing. Broccoli crowns should not be stored with high ethylene-producing products to extend shelf life. Broccoli crown produces very little ethylene.
The broccoli crown is not sensitive to chilling injury and should be stored as cold as possible without freezing.
