I use this when a recipe calls for grated or zested lemon peel. It’s a great substitute. I grind it up in the cuisinart to make zest. I like that it’s unsweetened and always on hand. Now I’ve always got lemon zest on-hand and don’t have to run to the store for a lemon. I wish Olive Nation offered Orange Peel, Double Diced. The only orange products I can find on the site are sweetened/glazed.
