Fresh corn is yellow kernels wrapped with bright green husk. Yellow corn is the predominant variety but there are also white and bicolor corns. Fresh corn is sweet with a soft, buttery flavor. Common application includes roasted and baked. Fresh corn is available year-round.

Check the tassels on top of the fresh corn. They should be brown, moist, and some sticky to the touch. Decay usually starts at the tassels.
Avoid husk that is dry and yellow and avoid tassels that are black and dry.
